Classic Almond Financier

For the Classic Almond Financier:


  • 71g      American Almond® almond flour
  • 121g    Powdered sugar
  • 57g      Bread flour
  • 135g    Egg whites
  • 14g      Honey
  • 3g        Vanilla bean
  • 0.3g     Crunched fleur de sel
  • 17g      Inverted sugar
  • 81g      Brown butter


  1. Mix all the powders together (almond flour, powdered sugar, bread flour).
  2. Add egg whites, honey, vanilla bean, crunched fleur de sel, and inverted sugar to the mixed powders.
  3. Finish by adding the brown butter.
  4. Pipe the desired mold.
  5. Add sliced almonds to each financier.
  6. Bake the financiers for 165ºC for 11 to 12 minutes.
  7. Cool and serve.
